Pho

Vietnamese noodles are much more varied than a single bowl of phở. This shortlist moves between chicken, beef, eel and fish-cake dishes, plus noodle meals served without a large bowl of broth. Every address below holds a Bib Gourmand. Pick stops in the cities already on your route; this is not a one-day food trail.

Checked September 24, 2026 against the 2026 MICHELIN Guide selection. This is our editorial Top 10, not a Michelin ranking or a firsthand dining review. A Bib Gourmand recognises good-value cooking; it is not a Michelin Star. Confirm opening times, menus and reservations directly before visiting.

Photos below illustrate dishes or city surroundings, not meals photographed at these restaurants.

1. Bún Chả Cá 109 (Da Nang)

Bib Gourmand | 109 Nguyen Chi Thanh Street, Da Nang.

Try Bún Chả Cá 109 for fish cakes rather than meat. Steamed and fried versions give the bowl different textures, while tomato and pineapple feature in the broth. Begin with the standard bowl and ask what any additional fish or crab will cost.

2. Phở Gà Nguyệt (Hanoi)

Bib Gourmand | 5B Phu Doan Street, Hanoi.

Start with a choice of soup or dry noodles, then pick your chicken cut. Phở Gà Nguyệt is a useful Hanoi stop for understanding that chicken phở is a meal in its own right. Ask what accompanies the dry version before deciding whether you need anything extra.

3. Phở Hà Hàng Hòm (Hanoi)

Bib Gourmand | 15P Hang Hom Street, Hanoi.

At Phở Hà Hàng Hòm, keep this visit focused on chicken noodles; the sticky-rice option can wait for another morning. Ask which chicken pieces are available and order the combination you prefer. This is one of the new Bib Gourmand addresses in the 2026 selection.

4. Miến Lươn Đông Thịnh (Hanoi)

Bib Gourmand | 87 Hang Dieu Street, Hanoi.

Choose Miến Lươn Đông Thịnh when you want to move beyond familiar beef and chicken bowls. Soup and tossed noodles provide two ways to try eel. Clarify the preparation and peanut toppings first, especially if a particular texture or ingredient would put you off the meal.

5. Bún Chả Chan (Hanoi)

Bib Gourmand | 114 Mai Hac De Street, Hanoi.

Bún chả is a noodle meal without being a conventional noodle soup. At Bún Chả Chan, keep the herbs, noodles and grilled pork together as you eat, rather than finishing each component separately. Spring rolls are an optional extra, not a requirement for a complete lunch.

6. Phở Lệ (An Đông) (Ho Chi Minh City)

Bib Gourmand | 413-415 Nguyen Trai Street, Ho Chi Minh City.

Phở Lệ gives this list a southern beef-phở stop. Choose cuts deliberately: brisket, meatballs and tendon do not have the same texture. The mixed bowl is convenient for exploring, but a simpler order may be more enjoyable if you already know what you like.

7. Hồng Phát (Bàn Cờ) (Ho Chi Minh City)

Bib Gourmand | 389-391 Vo Van Tan Street, Ho Chi Minh City.

Hồng Phát is the hủ tiếu stop on this route. Shrimp and pork-based toppings make it quite different from beef phở. Ask which toppings your bowl includes, particularly liver or blood curd, and confirm soup preparation instead of relying on a generic noodle photograph.

8. Bún Bò Huế 14B (Ho Chi Minh City)

Bib Gourmand | 14B Street 46, Ho Chi Minh City.

This is the practical exception in the list: Michelin describes Bún Bò Huế 14B as takeout only. Check that you can carry the soup somewhere suitable to eat. Specify toppings before ordering, and do not build a sit-down lunch plan around the address.

9. Bà Đông (Da Nang)

Bib Gourmand | 145 Huynh Thuc Khang Street, Da Nang.

Bà Đông provides a break from broth-based meals. Its bún mắm combines noodles, dressing and meat toppings, with roast pork a prominent choice. Check the mixed bowl carefully if you avoid particular meats, then mix a little at a time to find the balance you prefer.

10. Lê Gia Khang (Ngũ Hành Sơn) (Da Nang)

Bib Gourmand | 19 Le Quang Dao Street, Da Nang.

At Lê Gia Khang, ask whether the beef-bone bowl is available before deciding on your order. If choosing mixed bún bò Huế, clarify tendon and blood-curd toppings. Save room for the noodles rather than adding extras simply because the restaurant has a Bib Gourmand.

Make the meal fit your trip

Choose the exact branch listed above, check its current opening times and ask about portions before ordering. Menu prices can change, so confirm the total for extras, drinks and any service charges. Tell staff about allergies or dietary needs directly; a dish name or photograph cannot confirm every ingredient.
