A Vietnamese coffee menu is easier to navigate when you separate brewing method, sweetness and additions. Start with the kind of drink you want, then ask how that cafe makes it.
What a phin does
A phin is a small metal filter used for gravity-fed coffee brewing. It takes time, so a pause at the table is part of the order. Coffee made this way is often bold, but the bean, roast and recipe still vary between businesses.
Milk, ice and sweetness
Ca phe sua da usually describes iced coffee with sweetened condensed milk. If you prefer less sweetness, ask before ordering whether the amount can be adjusted. A drink that has already been mixed may not be easy to change.
Do not assume that every item described in English as milk coffee uses the same milk or recipe. Check ingredients if you avoid dairy, and ask whether a non-dairy option is actually available rather than expecting a direct substitution.
Egg, coconut and salt coffee
Egg coffee is strongly associated with Hanoi; salted cream coffee is associated with Hue. Coconut coffee is another richer style you may encounter. These names indicate different additions rather than a universal recipe. Ask about ingredients and serving size, especially if you want a simple black coffee rather than a dessert-like drink.
Choose the cafe for the visit you want
A quick street-side drink, a long conversation and a working session need different spaces. If you intend to use a laptop, check seating, outlets and the cafe’s expectations. Buy appropriately, keep belongings compact and do not assume a small busy table is available for the whole afternoon.
Keep your own coffee notes
Record what you ordered and what you would change: less milk, a smaller serving or a different brewing method. You do not need a tour of famous cafes to find a drink you enjoy. This guide describes styles, not a current ranking of businesses.
