Com tam is a Vietnamese broken-rice meal closely associated with Saigon, now Ho Chi Minh City. A familiar order pairs the rice with grilled pork, pickles and fish-sauce dressing. Extra toppings turn a simple plate into a much bigger meal.

It is a useful choice when you want something filling and easy to understand after several bowls of noodles. The main decision is what goes on top of the rice.

What makes the rice different?

The name cơm tấm refers to cooked broken rice grains. “Broken” describes the smaller pieces of grain, not rice that has gone wrong in the kitchen.

The rice gives you a plain base for the seasoned meat and sauce. Rather than pouring dressing over everything immediately, try a little rice with the pork first. Then add enough sauce for your own taste.

A Vietnamese pork-and-rice plate illustrates the serving style; toppings vary by shop.

Read the menu: suon, bi and cha

These are the words worth saving before your first order:

Menu wordWhat it means on a com tam plate
SườnPork chop, usually grilled
BìFine strips of pork skin, often mixed with shredded pork and toasted rice powder
Chả trứngA steamed egg-and-pork loaf
Trứng ốp laA fried egg

Sườn bì chả is a combination, not the name of one piece of meat. If you want only pork chop and rice, start by asking for cơm tấm sườn. Add an egg if you want it, then confirm the total price.

The word chả appears in many Vietnamese dishes. Here it commonly refers to the egg-and-pork loaf, so pointing at the tray is more reliable than assuming it means the same thing on every menu.

What does it taste like?

The appeal is the contrast: grilled meat, gentle rice, something sharp from the pickles and a sweet-salty dressing. Bì brings a different, springier texture; the egg loaf makes the plate softer and more substantial.

Our suggestion for a first visit is a pork-chop plate with one extra you actually want. Ordering every topping can hide the thing you came to try. If pork skin does not appeal, leave out the bì rather than writing off the whole dish.

Use the cucumber and pickles between mouthfuls. You can keep the elements separate or combine them on your spoon; the meal does not require a complicated eating technique.

A simple first order

Show “Một đĩa cơm tấm sườn” to ask for one pork-chop rice plate. Before sitting down, check which additions are included and which cost extra. A photograph of a large combination plate may not match the cheapest price on the sign.

If you are sharing, request another plate or bowl. If everyone wants a full meal, be clear about the number of portions. For a meat-free alternative, use our guide to ordering chay.

Fit com tam into your Saigon day

You do not have to reserve it for lunch: Vietnam Tourism describes com tam as a breakfast favorite also eaten at other meals. Check the particular shop’s hours before planning around it.

Save the address and menu name on your phone. For maps and translation, you can check 5G eSIM Vietnam | Viettel on Klook (affiliate link). Confirm your device supports eSIM and check the package’s network, data allowance and activation instructions.
